I cannot seem to understand how to change the colour of a nation into the one I want.

Currently the line looks like this :

U000 LightOrange dutch red_dark white_regular X

But when I declare independence my country turn WHITE !
I use Excel to mod my files, maybe this is a problem ?

Also, what do the last two colours stand for ?

That the country has a different colour in the game then in your file has nothing to do with which program you have edited it. Some colours just turn out differently ingame, f.e. darkbrown will be purple in the game IIRC.

The other two entries are for the two colours of the little waving flags above your units.
