I just copy and paste another COT info completely and replace the necessary things.

That COT info listed at the start is the only thing that needs editing.

cot = { location = 403 merchant = { TAG = VEN level = 4 }merchant = { TAG =
GEN level = 3 } merchant = { TAG = FRA level = 2} }
#Genua

For example.

But you have to enter a value for the trader, this wont effect anything will it? By that I mean itll change to the correct value once in game?

I put a CoT in Baghdad when I captured it as Turkey, and I put a CoT in Sevestepool (Kach) when Venice took it from me (bastards). I wanted to see if the Crimean CoT (Kach) would soak up the Crimea and Ukraine, and I had hoped the Baghdad CoT would fill the same place as the Lebonease CoT that has on rare occasion occured (Palastine, Iraq, Saudi Arabia)

The in game rational for all this of course is as follows.

Venice, in their war with me, lead a daring raid on my Crimean holdings (which I didnt really want anyways). By securing it, they secure their control over the Ukrainian and Crimean markets (which Moscow/Astrkhan and Danzig normally take over). Hence their CoT.

I, turkey, taking over Baghdad and Iraq. Can now more directly control the far east overland trade due to my newfound access to the Persian Gulf, hence my CoT.

Unfourtantly, I doubt the Baghdad CoT will take over the far east trade of Isfhan, just sucking up the immediate area, which will force me to finish conquering Persia, <sigh>

You're probably right-established CoTs tend to be stronger in the European/Middle-Eastern provinces than ones you edit into the game on your own initiative..........Lebanon's a big exception, but that may be because it can pop up naturally.
