Whenever I try to open the religion screen, the game will crash several seconds afterwards every time. If I try to click on a holy place, it crashes immediately.

Please attempt a complete re-install. Meaning that you also need to manually remove any left over folders or files on your computer ("...Documents/Paradox Interactive/Crusader Kings II") most likely.
