Pillaging and various questions

I have a couple of newbie questions:

1. How do you loot and pillage a town? I see the computer do it and I can't seem to figure it out.

2. Do monarch leaders outrank the various general ranks? Are there any other benifits for monarch leaders?

3. When do you get the peace option to force convert a country? I've gotten the option once as Turkey against the Persians, but I was wondering how to force it in other scenarios.

Just stay around a bit with an army in an enemy territory. They'll start looting soon.

They're the highest ranked ones and thus can take control of armies easily. They can be crap or good but they at least got the highest rank.

Only CRC nations can do so. OR in special cases Turkey on shia nations (coulmd also apply for other sunni nations).

Cavalry is good for looting. I almost had it figured out, once. I think a 10K cavalry force will usually loot if you leave them in a province through month end. When the fortresses start getting bigger (lvl 3+), then maybe more is needed.
