I haven't played M2 yet, but want to do so soon. Shall I install all the add-ons right away? Do they also improve the original campaign (e.g. like the HoI2 add-ons)? And how much do the DLCs actually add (the real DLCs, not the three full add-ons)?

yes, install everything rightaway, and progress through the campaigns, they are quite fun.
