I think it's doable as such but it probably will be quite dull to play an advisor unless they come up with a way to significantly extend the certain parts of the game. A too high proportion of gameplay is related to owning a title as of CK1 to make playing an advisor fun - without changes it would mostly be passive wait for events.
 
At risk of repeating myself, I think the best you can do is try to list all the potential game options a courtier has beside waiting for events, and extend it once you notice it's too little to be worthwhile. Because I share the same opinion that without major extensions to gameplay playing a courtier is not going to be particularly interesting.
