In my prison their is enough food, tables, benches. The canteen in freely open for everyone, but some prisoners refuses to eat, eventually starving til death. Almost all prisoners are actually in the canteen, but not picking a plate. What to do about this? I have Gangs DLC btw, so maybe I thought different gangs won't eat in the same canteen.

Could you please double-check whether there is food in the serving tables and whether the cooks were cooking something in the kitchen?

This is the so called "insecure prison" bug and it exists for more than FOUR years already. If you don't build a fence around your prison && if you continue to expand your prison with additional cell blocks without the mentioned "secure area"...

Yes they are making food, the food is on the serving tables. Some prisoners are actually eating, but most of them just come to the canteen and then immediately leave. At the end most of the food is thrown away

You have to double check the food distribution in the Logistics menu. I had similar problems in the past, which was related to the location of the cells VS the location of the canteen. Make sure to explicitly assign your kitchen with your canteen and the cells / cell block with your canteen and double check the zone assignment. For example accessible to everyone VS accessible to low security only. Looks almost the same.
You can also have this with laundry deployment or delivery deployment (when using helicopters), which is some times a pain the arse. You must re-assign everything before it works.
