it seems that underground its limited amount of squares you can grow food

but what about the surface? shouldn't this place be the place where you can grow corn and other surface crops?

and also is there animals.. and not like pet animals! but animals for meat like pigs.. instead of using wheat for bread you could use it to feed pigs and get meat instead!
 
Absolutely, you can grow plants on the surface.
You can't keep pigs for meat no, but there are animals that provide food. Hope that answered your questions. :)

Will we still need that stone to grow food on the surface of the map? I'm kind of wondering if that stone is kind of a game mechanic that keeps a certain amount of dwarves in that area and tells the dwarves AI that the plants that are within xx radius of it are food plants that need to be tended to. So on the surface do we need one of those stones, or can we simply build food plants anyplace on the surface?

No, it doesn’t affect it. You can place flooring over the soil and still grow plants on it.

You do still need the Fertile Stone to “assign” the Worker Dwarves to it. Otherwise they do not know that you want them to work those plants. And you are correct, the Stone does have a radius to it. If I remember, it 5 blocks.
