Can you choose the new Cadet Houses from the House Customizer?

Are there zip files for windows? I do not like using installers.

It is literally in the first post "mac/linux/zipped files" download. Also the installer works perfectly fine so it is probably easier to use that.

I downloaded that zip file but when I put all into the mod folder, it doesn't shows up in mod list.

Did you actually extract the folder and .mod file from the zip?

But now whenever I launch the launcher it simply crashes .

Have you backdated your version of CK2?

Have you backdated your version of CK2 to be patch 2.6.3 instead of 2.7
There is a post in this sub forum saying how to do so.

I am sure they are all grown up enough to ignore the question time and time again and not childish enough to prolong the release because some feels the need to ask instead of waiting patiently
