Is there a mod or something around here that makes the map entirely visible, even the parts that can never be explored? Not the fogged up stuff.

This is "Terra Incognita". It represents land that never was colonized during the time EU2 covers. There are mods that change the map (WATK, MyMap, and some others) but I don't think any of them removes all Terra Incognita. If you search a little bit in the scenarios forum, you should find something.
