Save Games:
No...there's no in-game function to delete them so you have to go to the folder and delete them manually. Depending on your version of the game and the directory you specified, it will be in:
C:\....\Europa Universalis 2\Scenarios\Save Games\
I find it easiest to switch to "details" view (if you aren't already viewing that way) and sort by file date in decending order. You can then quickly select all the older saves and delete them. Each save has 2 files associated with it...the .eug and the .eug.cfg so you should delete both.
Editor:
The editor hasn't been tested extensively with all systems so there are definitely some issue that can crop up with various people's hardware and/or software. If it will work properly on your system at all, it will work on the following monitor settings (right click on an empty area of your desktop and choose "properties":
Screen res: 800 x 600 (set on the "settings" tab)
Colour Depth: 16 bit (set on the "settings" tab)
Font Size: Use small fonts (set on the "appearance" tab)
Depending on your OS you can save those settings under a different Windows scheme name and then access them quickly when you want to use the editor.
