Most of the time when I conduct a siege of a province the standard army graphic turns into one that includes a cannon firing but sometimes (or always perhaps) when few men are involved the cannon is not displayed even though it appears that the siege is still taking place. Is there a real game difference between the graphics with and without cannon?

If you don't have enough man/cannon power to make progress then all your men are doing is 'covering' the fortress. This seems to be enough to stop it resupplying but the fortress will never fall. Bung in enough to exceed the garrison strength and the cannon fire will recommence.
