I began a game as Bohemia, took the Silesia area. Started asking neighbors if they wanted to Vassalize, and finally the Duchy of Greater Poland accepted. Turned out that they happened to be in a war with the Kingdom of Poland. So I jumped in and after a few months, I owned every Polish province.

Now - what would you recommend?

My interest lies in semi-role play, conquest for my dynasty. In other words, I'd hate to just give it back.

I tried handing out Counties to a bunch of my people, and eventually establishing the Kingdom of Poland with one of my offspring as the King. By this time though, my BB was apparently through the roof, because tons of people, most of them my own vassals, began attacking me.

So help me out, what are good options here? What would you do?

What's wrong with roleplaying a greedy king who goes on a conquest-spree?? ;) .... smash those scum that dare rise against you and banish them to the ungodly pagan lands.

Remember that offering vassalization gives you BB too ... per province the Duke + vassals have.

Since I see no DV icon for you, am I right in asuming you are playing CK1.05??

If you have DV, then force-vassalize the Polish vassals in the peace settlements. Should keep your BB down, while you grab the King's lands for yourself :)

as long as you keep as many provinces as your ruler can manage (80%+ effeciency), you should be able to squash every vassal rebellion, unless they all gang up on you at the same time. Even then you should be able to fend them off as they do not coordinate attacks.
 
I would suggest against ignoring bb for too much. If your bb is high enough, it will not be just revolting vassals pissing you off, but whole countries knocking at your door, in a very rude manner, and with a guillotine close by.
