I'd love to play as Teutonic order but I always get attacked by Poland-Lithuania and I just can't beat these guys. Any ideas what to do?

Why did you ask your question twice both in the main EU2 and the AGCEEP subforum?
If you are playing AGCEEP say so - then your post in the main EU2 ought to be moved here.

AGCEEP suggests to use weakling for AI aggresiveness for a more historical feel of the game. The AI will declare less wars which ultimately should result in a greater later challenge as the AI won´t squander it´s armies in countless wars against other AI states.
