The realm I'm part of is always shown as sub-realms by default, is there a way to turn this off?

It's more useful to know all your fellow vassals.
But like said before, you can just scroll out to see the full realm you're a part of.

My question is if you can keep it from automatically displaying the sub-realms regardless of how far you scroll in.

I don't think there is a way to turn it off automatically, but if you click on any of the independent rulers on the map then map in your area will stay out in the independent realms mode until after you will have closed the ruler's character window.
