I did this in my last Byz game where I restored the Pre-Justinian borders, basically it involves everyone's favourite little rump state; Treb, our Good Lord and saviour Skanderbeg, everyone's Second most hated Muslim; The Mamluks, the St. Michael Icon and some luck as per usual
What you first want to do is the Ordinary: Ally Theo for a temporary Protection vs the Ottos, maybe try PUing Imereti, etc
Then you should focus on allying Treb and Albania, both are necessary. After you ally then you basically have to count on the Mamluks to be hungry for the Tekke province and attack the Ottos. Once the Ottos cross the Marmara wait 2 to 3 months and DoW them for Macedonia, a little luck is needed here as Treb may not always want to attack the Ottos, if you happen to have the PU-mereti then that's good as well, otherwise you may want to retry OR ally Dulkadir/Aq/Karaman (if they hate the Ottos) You DoW, set Athens on Support, hope for a 1-siege pip general , get the St Michael Icon for extra juicy discipline, maybe an advisor as well (10 extra Discipline should do wonders) and Carpet siege your way from the Peloponnese up to Constantinople, You should have most of the Balkans under you by the time the Ottos kick the distraction Treb (or other) out of the war. Siege Karasi and Hüda for the extra WarScore and you should be able to take your cores back
Advice on this Stage: Do NOT take Vlöre, give it to Albania, otherwise you won't be able to Vassal them (and you really don't want to face a potential Hungarian Ally + Venice right now). Then you should take Plovdiv, Sofia and Karasi, if albania becomes Salty about contribution, give them Uskub, otherwise take it for yourself, prioritise instant Ducats over War Rep (you may get the Ottos in debt, ALWAYS try to get the Ottos in debt). Afterwards Hungary MAY swoop in for Northern Bulgaria, If you ally Poland (which should be easier to ally at this phase) attack in a moment of Weakness (or in a Moment of Unavailable Austria) and take the land, the big problem here comes from the fact that the Mamluks most probably have the entirety of Southeastern Anatolia as theirs.
You should Prioritise on Gobling up the Ottomans and the rest of Asia minor before then
Afterwards, ally Tunis (if the Mams haven't allied them already), Ethiopia/Makuria, QQ and the Rassids (good Combos include QQ-Tunis, Rassids-Mak/Eth).
The war WILL be rough, so, your top priority will be taking Tekke, Icel, Adana and giving Ayntab to QQ (or yourself, if QQ is not an ally). That will mean the Mams will get a landlocked mass inside of you and an ally, proceed to support rebels (usually Eretnid ones) and after they get their infependence, they won't have any army, so you will be able to insta annex them. The next one to two Mamluk wars will also be hard, but once you get the ball rolling in the third war you will be able to Pulverise them (I took Tripoli, Palestine, and Syria in a single war). Afterwards it's your Typical Ottoman game.
Also, be sure to annex Bosnia and Lika before the Protestant war, then join the Protestant's side vs Austria to get Görz and maybe Wien, so that you can Rome Later
