Would it be possible to put this into the game, with selecting champions done by some sort of game mechanic (like handing out honorary titles to members of your court that are 'Trial by Seven Champion' or some such)?

Due to its rarity in Westerosi history though, it should have some very stringent traits that a person would need to demand it, and can only be demanded from the king. Like, if your character is imprisoned and has the traits Zealous, 15+ Martial, Faith of the Seven, Brave, Duelist, Just and lack the traits Kinslayer and excommunicated, then it would allow you to demand it.

The trait requirements are more to limit the number of trial requests there would be.

But, it would be rather difficult for many characters to find seven characters for a trial like this.

The King could just choose the 7 members of the Kingsguard, and as per Westerosi law, if you invoke a trial by Seven and can't find 6 other people to stand for you, then you're judged guilty automatically.

You do realise that this condition was why Aerion demanded the Seven, that he thought Dunk could not make up the numbers?
 
Even Aerion's father, the future King, thought that his son demanded the Seven out of fear. And it was because of this Seven that he became king, by fatally wounding his own brother, the heir to the Iron Throne.

A Trial by Seven is not deemed to be a glorious thing. That's all I'm saying.
It'd be a damn cool game mechanic to utilize though.
