The problem is as follows. Whenever a crusade is succesful and a ruler is appointed to the conquered kingdom title, said ruler will likely soon convert to the local faith and culture, and then become the target of the next crusade that will depose them, leading to a cycle of useless "succesful" crusades. I believe the problem is caused by how often populist revolts happen, and the sheer number of them will make the AI eventually accept their demands and convert themselves. I've had my daughter that I established as a Queen of Andalucia convert to Muwalladi within 2 years of the crusade, and I asked her to covert back to Catholicism. That happened 2 more times before my ruler died, I lost the influence over her, and she convered back again.
I believe what needs to be done, is to either make the populist revolts much less likely to happen again after being put down, or make Holy Monarchs much less likely, or unable to convert to local religions. Popular opinion in a province stays deep in the negatives even after a revolt has happened, and even when you are a Holy Monarch with a +35 to popular opinion.
