Updating Steam Workshop Assets?

So far I've had to take down previous versions of my asset and re-publish the newest versions, losing all the stats on the original version of the asset in the process. I know that the update button replaces the share button if you've subscribed to your own asset, but there's no "import new model" option, so once your model is imported, you seem to be stuck with it and can only modify everything around it.

So... how do I actually update an asset with a new model on the workshop?
