I know it has been stated that upgrading will take time and money. I am also wondering if the ships will have to drydock during the upgrade process. I have seen some games....galciv I am looking at you....where the ship can be flying around the galaxy and new giant FTLs are being installed. Doesn't make sense to me.

Yeah, I wanna refit my older ships to make them better, but it'd be pretty nice if it required the use of a drydock, or at least being based around a planet, depending on how ship production/repair/refitting is handled.

Obsolete ships can be updated at the cost of time and money
This comes from the Stellaris Wiki and assuming this is still accurate come release you should be able to refit older ships but it will take time and money, which is great because I hate having ancient fleets of mine flying around ever so slowly with crappy weapons while I have other fleets with the best tech in the game zipping around the universe knocking out enemy fleets and planets left and right.

I really want to see us limited to upgrading ships at our colonies with shipyard facilities. It always bugged me in the GalCiv games when I could just upgrade my ships in the middle of empty space. Modern games like Endless Space and Stardrive require ships to return to friendly colonies to be upgrades so I would hope Stellaris takes a page from their book.
 
Having to use industrial capacity to upgrade ships is as old as Master of Orion 2 at least (not sure about 1, never played), and unit upgrades are handled exactly this way in HoI3, so I guess it's likely that Stellaris will follow suit.
