is there an event where i can choose to go all out and take all of mexico ?

or wud i have to do that manually?

I'll think you'd have to opt to continue the war when you are asked to offer Guadaloupe Hidalgo and then get a peace treaty hopefully taking all but one province, then leaving you free to annex in a later war, however all these annexations will give you a lot of BB.

Take a peace humiliating them, and grabbing some Mexican provinces OUTSIDE the Guadalupe Hildalgo. Guadalupe fires, get all that land. Come back and five years. Unless you use Neville there is now way you're going to get enough land to make them be annex-able in two wars. Plus the nationalism rebels will drive you insane.

but i thought that historically, during the war.. annexing all of mexico was a seriously considered concept?

I'm not sure if VIP changes anything with this war.. But you might need to trigger Guadaloupe Hidalgo so as to gain control over the Apache, cause I'm not sure if you get control over them otherwise.

If you really want Mexico, it would be very very easily, and even fairly non ASB to create a custom event where you annex all of Mexico after the capture of Mexico city, or something of the sort.

Wage multiple wars and ignore peace armistice. You might ask, MTJ wouldn't that devastate my prestige? No it wouldn't because each time you would presumably occupy all of Mexico and wait for them to send you a peace treaty containing 100 prestige + provinces.
