I'm the king of Westeros and a knight myself, and i want to knight my son who has the squire trait that is 18 and lord of dragonstone. Do they have to be in your court for you to knight them?
 
You both have to be in the same court to use the personal interaction knighthood. But in a month to twenty years you might get a event to knight him.
But you could just make him your Marshal and have him train troops in your capital then use the Personal interaction.

Children can pickup the Squire trait by being tutored by a knight. Over time after acquiring the squire trait they will become a knight sometime after the age of 18.
