what do I spend the money on? Do I just recruit endless man at arms?
I can't spend it fast enough to build on my baronies

do I spend it on my vassals' baronies and risk them getting strong and rich enough to mess with me?

Well, this is an Issue, the Game has, at the beginning, everything costs too much and in the Lategame, everything cost too low.

The Devs really need to rebalance the Economy of the Game.
Ransom Offers are way too low in my Opinion, should be increased based on the current Gold of the Character or his Liege.

Also, Court Positions should cost a lot more Gold, they are for rich Rulers and not for poor ones.

the build 1 building at a time x holding limit is also kinda dumb, should be removed. Would be a good way to spend the excess monies

After you've reached some point in your campaign (court maxed out, MAA maxed out), you can do nothing but hoard. Investing in buildings will most of the time give you an even higher cash flow and more money you can't spend.

Or to put it in other words: At the beginning of the game everything regarding wealth feels meaningful. At the end, nothing feels meaningful because all is maxed out with ease.

And don't forget, that an high Stewardship Skill gives you even more Gold.

They should cap all benefits from Skills or give the Game the Project Caesar Treatment, where Skills of Characters are around 0 - 100.
 
The problem (or better one of the problems) with 1178 start is that there are suddenly all buildings slots filled in the whole world or so it seems to me. It's strange how few they build from 9th to 11th centurie compared from 11th to 12th century...

Part of the problem is that buildings have no maintenance at all. Military and fortification buildings should have a monthly cost attached, increasing as you upgrade them. In real life only wealthier nobles and the crown had substantial castles, because they were extremely expensive to maintain. Most castles didn't fall into ruin because of war, but because they became too expensive to maintain and were eventually abandoned.
It would make sense that in times when income is tight, you'd rather not build more castles, and maybe even downsize. It might even reduce some of the modifier stacking for MaA's,

I don't even want to think about how badly the AI would "flap" if it had to pay building maintenance.

While this is a good idea, it would take opening up the building system to allow characters to downgrade and destroy buildings. Since you'd already be cracking open the building system to do that they may as well make a real building system instead of the straight upgrade joke in the game now.
