If I am a vassal of France, and I declare war on another vassal of France, and then France comes to defend them, will the war end if I smash the guy I originally declared war on, or will France still descend on me and destroy me even after I make peace with the vassal? I kind of assume the latter, but it would be good to know. Thanks!

France will continue the war even if you make peace with the vassal. But as long as France has no claims on you, losing the war will only hurt your prestige and your treasury.
Can they force a peace deal on me that puts me into negative monies, or can I mildly game the system by having spent a lot of money to get an easier peace deal?
The French King can take whatever money you have (assuming as is likely that he defeats you completely) but he can't take what you don't have. That is, a war opponent can only demand cash to the extent you have a positive balance in your treasury.
If the French King has no claim on you, as Veld said, you can and will survive the war. Worst he could do would be to take whatever is in your treasury and maybe (?) force vassalize you. However, in my experience the King of a realm typically has claims on most of his vassals. So it's possible you could survive the war without loss of titles, but IMHO it is not likely.
Bottom line: the declaration of war you made or are considering is very dangerous, unless the King of France is in a period of great weakness.
