When one joins an MP game, what happens with the other mods they have? Would they need to be destoryed in favor of the most current beta and patch?

I have a DS mod I cherish and wish to keep for future games, but it is only moded for the Aug 15 patch and not yet for the December one.

It depends slightly on the mod, but the general rule is, mods are unsafe. Changing events is extremely unsafe; changing what kingdoms a province belongs to is considerably unsafe; changing cosmetic stuff like shields and colours is probably not unsafe.
