Haven't seen the show, so I wouldn't know about stuff like that, so bear with me.

She's described as pale and red-haired in the books as well.

I just assume Yi Ti is supposed to be Cathay (Medieval view of China) also due to the name Jade Sea.

A lot of people do, but there's no real evidence in the books. The only description we have of Yi Ti people says that they're 'bright eyed'.

Personally I think that they're likely 'pale' like the Qartheen and Asshai'i, their neighbours to West and East. GRRM's just subverting orientalism.
 
Melisandre is not from Asshai, in her POV shes says something along the lines "since before Asshai". There cannot be a before if she originated there, the context is that Mel, just like Mirri Maz Duur went to Asshai voluntarily at some stage in order to learn magics.
The only people from Asshai that we see in the books are masked female Shadowbinders like Quaithe or the merchants in Vaes Dothrak who are described as "dark and solem".

In the mod the Jogos Nhai do use the mongol faces, but they can only be found as randomly generated slaves.

I remember something like that, but I'm sure she was talking about 'before the temple', not 'before Asshai'.

Do you have an actual quote for that? The wiki states she's from Asshai.

EDIT: I just checked and you're right. The line is "That was a lesson she learned long before Asshai".

But in the same chapter she thinks of herself as 'Melissandre of Asshai". Weird.

That Melisandre was born at Asshai doesn't necessarily mean she's culturally Asshai. For all we know, she could have been born from a slave that was from elsewhere.

There are strong indications that she's masking her appearance though. So go figure.

Yeah but she's the only Asshai'i we have full descriptions of that doesn't wear a (physical) mask.

It's not really a lot to go on if we discount her.
