Hi i`m running at the moment 5/6 convoys, how do you get more than that as i`m almost certain that pretty soon i`ll be needing more ? Thanks for any advice.

You have to build them. In the production build menu there are buttons that say Convoy and Escort. Just order your production build there. For example, for every unit you build you'll get 10 units, so if you want 50 convoy transports order 5 built. The same goes for Escorts.

I know that, i`m just trying to figure out the amount of convoys i can run. Says in box that i have (at the moment) 5 out of 6 convoys running 
Playing as Britain,Japan or USA and Italy you will need a few hundred of convoy
Btw I have a question.
Is escort ship worth?Are they cause damage to the enemy ship and plane (which is raiding convoy)?

It means you have 6 convoy routes assigned, of which 5 are currently running. Convoys only run when there is a need to replenish the stockpile at the target province. If you've set the AI to handle the creation and running of convoys, a new convoy route will be assigned as the need arises. There is no limit to the number of convoy routes you can have assigned, but it will only be possible to have one convoy route assigned to each of the specific areas that aren't directly connected to your capital and thus out of direct supply. To run convoys efficiently you must increase your number of convoy ships as your number of unconnected areas increases.
No they're not worth it. They're bugged and just sit in the deployment pool doing nothing. If you use manual supply convoys then maybe they do something since they reduced the amount of convoy casualties sustianed back in DD. Who does the raiding can be either plane or ship but generally they are ships and subs. Occasionally the AI will use planes but it's usually the US AI and in the Pacific.
OP: There is no limit to the amount of convoys, it just depends on how may ships you have
