By starting in 1805 a lot of the revolutionary fervor has gone but the nationalism fervor was still high and growing in places like Germany (Prussia) and Spain, are theses ambient factors included in the game?

Yes they will...of course based on the game's history: Spanish nationalism and guerrilla would not be there if Spain is never invaded for instance...
