Not a clue, prior to this I've never seen an AI Greek Sicily at all.

North Italy is zoroastrian yes but that's because I've been mat-marrying my courtiers to them.

I'm England in this game, and while it is strange that I conquered Castille, the AI (before I started meddling in Iberia) that controls France decided to take down the Muslims

You must rage quit a lot. I've never seen France fail to expand into Iberia at some point. England there is something new to me though.

France isn't all that ahistorical, though. The French were big on the crusades and reconquistas. If you look through some of the histories of the Spanish royalty in game, even, you'll see some Franks there. Mind, France being in the south of Spain is a bit of a stretch, but... eh!
