Which one? 3.5(the version I play)uses his and her for different things, changing it up. Generally they will assign it for classes or races arbitrarily.

Alright. Roles are pretty much finalized. I might cut the doctor and padreous powers, but that's about it. I'll start sending out invitations tomorrow, although I'm pleased that we already have 25 players. Also, I'm officially closing signups on Wednesday at 22:00 GMT. That will give invited players two days to see and respond to invitations.

They do have certain characters for each class that they use, however the class in the DND Hanbook is key for determining what your character will be. The class is like a base template for a character, and can be any race or sex((but you generally don't see a female half Orc lawful good Paladin trapsing around very often)). As the Dungeons & Dragons Player's Handbook Core Rulebook I v.3.5 states on Chapter 3 Page 21:

"Your character’s class is his or her profession or vocation. It
determines what he or she is able to do: combat prowess, magical ability, skills, and more. Class is probably the first choice you make about your character—just ahead of race, or perhaps in conjunction with that decision. The class you choose determines where you should best place your character’s ability scores and suggests which races are best to support that class choice."


But yes they do have a set list of base characters for each class. Here are them for 3.5:
