Seeing the planes doing high-g turns at below-stall speeds is already painful. Jets would look even more awkward.
Honestly, the only fighters that I can see fighting in the manner of a slow turn fight on these sized maps are things like the Wildcat FM-2, and... I'm not even sure if the Germans would have an equivalent low-altitude turn and burner. Having played my share of flight sims, the complex three-dimensional nature of aerial combat just cannot be glossed over with two dimensions and done justice.
Quite frankly, I think the most realistic thing to do would be to keep aircraft limited to close-support types, and have them streak across the map at high speed in a gauntlet of triple A fire. Model Allied air superiority by just making German close support aircraft more expensive and less varied.

some AA would be better at taking out low targets but things like the Flak-18 would be better at hitting targets at high altitude (will flak be a thing in this game?) and things like the .50 cals and 20 mm guns would be decent at low flying and 3.7 and 40mm would be decent at medium altitude. could create a nice and diverse AA selection all have there own roles.Would be interesting to see simple mechanics such as altitude play in. Nothing too facncy, but maybe something like planes appearing at High, Medium, or Low altitude. Engaging ground targets with guns or rockets would take the plane down to Low Altitude, and bombs would also be more effective if the plane was flying low. On the other hand, flying at a higher altitudue would give a plane an edge against other planes, and of course AA would be more effective against planes flying low. The aircraft's speed could determine how quickly it regained altitude after going low.
Simple rules like this can add so much tactical depth to the game.
