I was trying out old versions of the game via the Betas in the Steam settings. However, now when I try to run the current version the game won't open. Sometimes it gets to the loading screen and then crashes. I've tried everything I can think of to fix it. Really annoyed.

I verified the integrity cache in Steam. I deleted the whole game and reinstalled it. Still doesn't work. Every other game I own still works. Makes no sense.

Delete the contents of the Documents/paradox/ck2/ folder, except any valued save games. Does that help?

I literally deleted the entire game. Restarted my PC. Reinstalled it. And it still won't work. The launcher just randomly closes when I launch it. All my other games are working. This is really bizarre.

That's because you didn't do what he directed you to do:
go to Documents/Paradox Interactive/Crusader Kings II and delete everything in *that* folder (you can backup any saves from /save games you want to keep elsewhere). When you delete CK2 via Steam, this folder doesn't get deleted (Same thing happens for most games on Steam, actually).

Once you've deleted the contents of *that* folder, try launching the game.

Why do you think I didn't do what he said? I literally said that I deleted the entire game. I deleted every CK2 folder.

Perhaps because that folder is in a completely different location from the location of the vast majority of CK2's game files? Because you know how to verify integrity of the game files, I previously assumed that you only clicked the 'uninstall game' button (the button above 'verify integrity of game files' in Steam).

Are you remembering to turn off any mods that aren't compatible with the current version of CK2 (If it's the launcher that isn't not working, probably won't help)?

Are you sure that in the BETAS tab, you chose 'NONE - Opt out of all beta programs' instead of '64bit_beta - ...'?

In a previous post, you said "I literally deleted the entire game. Restarted my PC. Reinstalled it." Is there a chance you haven't restarted your PC *after* reinstalling CK2?
