Granaries give a buff in POP growth depending on years of yearly food consumption stored. Thus it depends on your province total POPs to see how much a difference 500 to 600 does.

Look at POP growth in the territory window to see modifier from stored food.

On the other hand, food stored allows to maintain cohorts in your province when you lose food income. Some mods have included seasons for food production (a very good idea if you ask me).

Each granary adds 200 food capacity; an increase by 100 is likely caused by getting another territory of a province.

It says "yearly food supply" and It does not say "max food supply" so 200 or 500, If it is full, you will have the modifier. No matter quantity. It is about a threshhold, not max. value.
Yes, is very smart thing to do. If there is food security (defined by years of consumed food stored) your population will grow faster than if there is uncertainty or food rationing.

When your population is very big, you need many more granaries to keep your growth bonus, thus the population curve is not malthusian.

In the middle of the peninsular, Madrid today, there is no enemy and barbarians around . Battle is not predicted on this centrical city and even I do not need wall/fortification.
At the same time I always import enough food from other cities and I have enough base trade routes.
In this case food will never be come to an end. I do not need granary as long as I obtain that surplusage status.

This is the situation when granary becomes useless, literally surfeit and glut.

When your city population grows your food stored will be the same, reducing the bonus. If you want to keep the growth bonus you will need more granaries.

For example, from the picture above the food stored (200) gives a 10% bonus growth for that population eating 144 food/year.

When the population grows, the food consumption will increase to 220 and you will lose the growth bonus. Building a granary and having enough food to fill them, you can keep your population growing at max speed.

Also, the defensive modifier is nice, not going to be attacked in SP but in MP is always something to be afraid of.

No, it still provides its effect. More pops consume more food, so the amount of food you need to store to trigger the maximum growth modifier (120 month consumptions) grows - and you need more and more granaries to have that storage room. How realistic this is (inside a game which needs to abstract) or whether its worth the effort are different questions, but Granaries keep an effect. And I will continue to use them to reap the growth modifier (and depending on cirsumstances also the defensive benefit.

Some players have tried this, on the long run it could be very powerful, but in the game span you are better off having more territories growing POPs than one territory growing faster POPs. Because every territory is limited to grow one POP at a time regardless of how many POPs are there:

1 city grows 1 POP in 100 years due to granaries
20 territories grow 20 POPs in 400 years

After 400 years you will have 4 POPs vs 20 POPs.

It would be different if the speed of grow is affected by other external factors, like diseases, sanitation, work availability, etc…

EDITED: I made a mistake by confusing pop growth with number of people born. As SkeletalForce has remind me, in a city more people will be born but also more people will die. POP quantity is not a factor for POP growth.
