Cause I noticed the cooldown is 5 years. Can we only raze 1 building/holding every 5 years, or does it automatically destroy a building until the entire holding becomes nomadic over time like in CK2?

You reduce every building in a holding by one level every five years, but only if you hold it directly. If you give it away, someone else gets to raze it

Probably done for balance.
Would be pretty frustrating if you fell to Genghis, recovered, only to then find yourself reduced to 867 development.

interesting idea for this but the implementation does look ridiculous

maybe raze should gray out the old holding but maintain all the building

and settled ruler taking that holding back can pay extremely high amount of gold for total recovery of all the old building

or low sum to restart the holding from level 1

It's ridiculous that they somehow made it worse than in CK2
There I had to press once and wait on each, but here not only that, they are razed only by one level at a time with a cooldown.
And I have to manually revoke cities and temples from barons to raze them too. I conquered Byzantine with ruin cb and now I have 130 holdings to raze, revoke and give away, all manually.
Did someone who playtest it really never pointed out how tedious it is? Surely realm-conquering CB was supposed to be used on big realms

there should be different cb some raze all target holding automatically and give winner loot

some subjugate target and leave them paying tribute

Nothing stops you from artificially making AI check for that button less often than the CD is. It's not like it isnt done everywhere in the game....
And if you mean money, coz you do get quite some money from that - let me raze while on CD receiving, idk 10% of the gold i would usually get. Or 5%. Or even none.
It's not like the current game is balanced in any sense
