Strange shield for arab catholic rulers

As far as I know, it is possible to have arab catholic childs (for example from castillan parents).
But when such childs have a county, their shield is a circle one with a crescent, even if the ruler is catholic.

On the other side of the coin, I have seen sheikdoms and emirates with a European style sheild, although they are Arab Muslim. :confused:
