I am continuously getting the same error in all of my games that crashes the game and makes it unplayable. I would say about midgame this error happens. I receive the [19:28:42][eventtarget.cpp:2341]: Undefined event target: shroud_country, location: file: events/nemesis_crisis_endgame.txt line: 862 in the error logs every time. It always tends to happen in "January" in the game calendar.

I have tried almost everything to fix this error. I deleted and reinstalled Stellaris. I have turned off all mods. I literally deleted every other civilization in the galaxy through console commands to see if that would fix it and it did not. I even downloaded the Nemesis DLC in case that would fix it.

This error is appearing for all my games, effectively making Stellaris unplayable as I know it will crash midgame each time. I do not know of any others ways to fix this, but my copy of stellaris is basically broken as long as I continue to see this error. If anyone has ANY advice I'd greatly appreciate it.

I have looked around the web and everyone who has ran into this error has not been able to fix the problem. ANY help in any direction would be greatly appreciated as I'm really bummed as I love the game.
 
I have turned off all mods.
Disabling mods does not remove effects they have already had on the save game file.
Do you also get this in a galaxy that's never had any mods used in it?

If so, how are you determining your crash is related to that particular error? It is quite common for lines in error.log to show cosmetic errors.
