To change the spouses would involve going into saved games and editing that. Search his name, underneath there's a part that says spouse={

Insert a name in there. If necessary create a new character by copy pasting an existing one and changing what you like, and also making sure to change their character id to a new number (89853245 probably isn't taken
).
Very possible, fairly easy, just compare what's already in the save.
Oh btw open the saved game with notepad, fairly easy. If you really want I'll do it for you (although if you want that more specific details of what you want will be required obviously. However also it's probably a better idea that you do it so you have some idea in the future)
Also, find the province id number (they are at the second half of the save, each bit of the save is in sections) and there'll be stuff like controller=SEL or whatever. Once you've found the province(s), simply change controller=??? into controller=ROM and things should be fairly simple from there. If there's enemy armies in the territory then they will move out, however not instantly so if you need them out of the territory (so it doesn't look bad for your AAR screenshots) then that might require a bit more work repositioning characters and regiments (or you could just delete those characters/regiments, after all if they aren't from your country shouldn't matter so much).
