I have, for a long time now, wanted to play a game where i would make an empire spanning from Mauretania to Persia, but haven't been able to think a good coutry to do it with. I thought that perhaps I could ask here for a suitable country other thatn Apulia (too easy) :)

The duchy of Apulia or the duchy of Barcelona are good starting points for that.

If you want to start as a county, then any south-Italian county will do.
 
I did it with Kerne in one of my singleplayer games. Inherited Brittany, went on a crusade to Alexandria and conquered a substantial part of Egypt, and then a powerful and rebellious brother back home essentially made me an exile. With my southern empire stretching from the Canary Islands to Baghdad, I think I did fairly well in my misfortune.
 
Duchy of Salerno. Conquer Syracuse before Apulia crushes you. If you can conquer enough of sicily before other people do, and avoid getting wiped out early on, you have the perfect base for conquering Africa.
 
Duchy of Apulia is a very easy one to conquer Africa with. Crush Sicily before other Christian powers, form the Kingdom of Sicily, and begin conquering North Africa. The region just south of Sicily is a good place to form some Duchy titles as well as start collecting provinces for the Kingdom of Africa title. The character that beings as the Duke of Sicily has a bastard son who makes a good marshal. He has good stats, and there's an event if your bastard son marshal is leading a siege that automatically wins the siege. Watch out for reputation though. Conquering Africa is almost too easy, and you'll likely build up a lot of reputation very quickly. Between reputation and mobilizing your vassals' armies for these conquests, you may find yourself scrambling to hold off revolts if you're not careful.
 
Dauphine Viennois, because it appears to be a reasonable starting point for getting any title you fancy. Just make sure you've banked enough gold to buy your titles the day after you qualify for them, lest von Franken decide he'd rather have them for himself.
