IRL I rather like the mongol invasions as history. But fighting hyper-technology mongols in vast numbers gets very old, as does playing on Very Easy so that the mongol threat is scaled down.

How hard would it be to have a mongol-less mod? Think of it as alternate history where Temujin died as a boy (iirc he and his mother were exiled into the harsh wilderness, its not much of a stretch) and remained only a threat to northern china.

I have no Modding skills but I think there's a demand for this mod.
 
Easy:

1) Open events.txt in DB-subfolder with a text editor
2) Remove line event = "db\events\Mongol_Invasion_Events.txt"
3) No more mongols.

It would probably be better to simply "comment out" the line by inserting a # before it, in case you would want those lovable mongols back with minimum hassle. ;)
