The Geniza records of the 11th-12th century show that the Deccan exported iron & steel to the Middle East. Manucci reported that iron ore from Gwalior Mines & Tendukhera were of best quality and they were sent to many parts of Mughal India for further processing. Gwalior was one of the largest iron trading town in the North.

Mining was widespread in Golconda, Karnatka & Mysore. The Golconda iron were not only famous in India but had very high regard in Persia for it was the only one from which Damascus swords were made. Another important area of iron mining was Assam - Upper Assam & Jaintia & Khasi Hills. The Mughal India used to import iron hoes and bell-metal vessels from Ahom states. Chhota-Nagpur plateau area is yet another important one. Sambalpur & Palamu-Singhbhoom region.

My suggestion is to add Metal resource to some additional provinces:

Gwalior (525) - Though this is depleted today, it had very rich type of iron ore and was operational since ancient times till early 20th century. (The upper portion province 525 and lower portion of province 524 should Make room for a new province Agra. The upper portion of 524 (central Doab can become Mathura.)

Mahakoshal-Mandala (550-551) - Tendukhera in Mahakoshal was an important mine with rich quality ore.

Sambalpur (553) - This is another important mining area.

Palamau - Though this will fall under 560 Jharkhand. Ivory represented is not too appropriate.

Upper Assam - Province 556 can be broken up.

Jaitia Hills - Meghallaya bordering area - difficult to show for Meghalaya is a waste land in the game.

That's a very helpful PDF you've posted but I'd love to have a bit more to base any changes on. It was my impression that mining did not really take off in Jharkhand until much later for instance and the scale and era (pdf only says "pre-modern" and that's quite a long period of time) of some of the operations that are mentioned here is very unclear.
It's quite possible that we've missed out on some Iron in India given that our main sources have been Ain-i-Akbari and what was known to be exported by European traders (who generally would not have had an interest in Iron). Many of the provinces you bring up though are in the Indian Tribal areas and it seems unlikely (but of course not impossible) that they exported Iron in this era on a scale that would mean it made sense to change the in-game trade good. To be clear: I realize that this is quite an assumption and could well be wrong but to change things I'd love to have more to go on. :)

Incidentally, what book is that from? :)
