I declared war on Scotland to take some of their land in Iberia. At the time they were already at war with an Emirate and had employed two Holy Orders to fight the Muslims. Scotland marched his 14k strong army on my 8k and promptly got obliterated because only about 800 of his army fought me. The rest were holy warriors who didn't take the field against me.

The Teutonic order were in fief to the golden horde in my game? How is that possible? I couldn't see exactly what was going on due to the fog of war but they were in fief to them for maybe 5 or 6 years...
 
This exact thing happened to me. I declared war on France while they were defending against Mauretania. They had three holy orders employed. One they would keep in one of my provinces, together with hundred or so french soldier who couldn't besiege it because of their low numbers. The other two they kept moving back and forth between my armies, and would sometimes send in small forces of 600-800 men who then had to fight alone.

When fighting both chatolic and muslim foes the AI doens't seem to be able to differ between them.

They have to me multiple times as well, but they never press them and they don't get inherited, so that's another example of poor AI. Why waste your chancellor developing claims you wont use? That would be time better spent improving relations or sowing dissent against an enemy.
