Any undocumented shortcut keys or anyway to rebind keys?

The pause/break key is not a good key to use as it is situated at the top right corner and too close to the mouse. Any way to set it to another key?

Also there is no quit command, only a Surrender command. Can I quit a game without "surrendering"?

I second that. I want to quit and not have to hit ESC to avoid seeing a gallows in the town square and my "capital" burning....

I don't know whether there's an in-game way to re-map the keys, but you can also pause the game by clicking the little clock in the top corner (I find that even more awkward than reaching for the pause button, though...)
