Fight successfull wars and in the peacedeals, keep a lower peace-score then warscore, the difference will then be added to your prestige (or if you have a higher peacescore then warscore then it will be subtracted from your prestige).
You can especially earn a lot of prestige if you let your opponent keep the claims he has on your titles. You can easily get 1000s of prestige that way.
