From a historical perspective, I think Djerba should start with a castle, though I don't know if that would be a good change balance-wise. Either way, I definitely think grain should not be the trade good in Djerba. Possible alternatives might include dyes (the island's dye industry in the time period is not well documented, but it was a crucial source of murex in antiquity, and there was still a notable community of Jewish dyers working with henna and indigo which they were growing there in the thirteenth century), cotton (known to have been exported from Djerba to other parts of the Islamic world around the early middle ages), fish (everyone's favourite thing to put in an island province with no other obvious trade good, and a major source of sustenance for the island's inhabitants throughout history), or some other thing.
