If anyone needs a script for the mass conversion of character religions (It may also work with cultures, but I haven't tested it), you can use this. Put it into the folder where the character files are and it'll convert anyone whose death is before 1054 and who is Catholic or Orthodox to whatever religion you want. You can edit the script variables in notepad++ if you like, just give credit to Rambo if you use it. I used it to mass convert all Catholic and Orthodox characters to Imperial (Chalcedonian) in my mod, so if anyone is planning to add Chalcedonian and the Great Schism, this might be useful. Unfortunately, I don't have a version that works with province files because not all provinces that begin as Catholic or Orthodox remain so after CM and TOG, so you'll have to edit them manually.
