It has been said that the various coat of arms represent Kings, Dukes and Counts. What about the small round one?
 
Well if Christiandom is already covered by CoA of counts, dukes and kings what is the only logical explenation ?

In most of the screenshots where I've seen it, it seems to represent Moslems. Not sure if it would also apply to other non-Christians or not.
 
Maybe they represent independent fiefdoms controlled by a local clergyman, like a bishop...

Eh, my gut tells me no. In some of the released screenshots, particularly those of France, known ecclesiastical fiefs, such as those of Rheims and Auxerre, are visible. Unless, of course, they've been taken over by a secular authority, they're definitely using the 'normal' shield.
