Battle loses

If my technology same, or near same as enemy's I never attack enemy army, if i havnt at least 1.5-1. Never attack enemy fleet if i havnt 3-1. Battles are unrealistic. The most perfect example i can remember: My fleet under Bagge af Boo with 30/0/0 meet french fleet 5/0/5 with default commander. Morale was same, strong. During the battle Bagge sank 5/0/3, no lose any of own ships but morale goes down and he retreated. I just can't believe, that my boys seeing that enemy have left 2 transports will retreat cause they are too scary. Also 1 swedish line ship turn into retreat my 40 line ship fleet. Also it's too unrealistic that i beated 20/3/30 (very strong) english army by having only 2/0/0 (invincible) by defending Goa with default commander. And those examples are going during all the game :(

Don't know what a rules in BG, but if they are same as in CG they are unrealistic.

I can see how frustrating it is sometimes to see your powerfull
army defeated by a tiny army with not apparent advantage.
It is true that the game is not as historical as some
might want it to be. But also have to admit that the game does not
put any advantage on small armies, and in the end it just even up.
Altought this feature may make the result of a particular battle a little awkward, I think it certainly makes you think more in terms of strategy than in terms of quantity. Its not about building big armies and taking the world by storm, but about choosing your battles carefully, and understanding that it is not the goal of the game to win the every battle, but to use them wisely as means to win the wars and finally the game.

Also, if someone could explain the besiege button, I'd be eternally grateful

Maybe a little late, but I didn't spot anyone else answering this part of your question. If you press the "besiege" button it leaves a minimum force (enough to maintain the siege) besieging while the rest of your force can move off elsewhere.
