Don't know if this is in the manual, but the religion of the CoT's owner makes a huge difference in the size of that CoT. I've found that Catholic >> Sunni >> Pagan. For example say you have three adjacent nations, #1 has a Moslem CoT, #2 belongs to a nation without a CoT, #3 has a Catholic CoT. The Catholic CoT will completely take over the neutral nation - the Moslem CoT can only keep its own nation. If you replace the Moslem with a Pagan, the Catholic will also incur into the Pagan nation. I think Protestant CoTs are only slightly better than Catholic ones - the big difference is between Christian and Moslem (and Pagan). This explains why China loses nearly all and India (Moslem) some of its CoT area when a Christian CoT opens up.

Well, it looks like you might be knowledgeable about CoTs, so I have some questions:

The manual talks about CoTs moving. I haven't seen that, although I have seen new CoTs forming (in the Americas). What are the mechanics about how and why a new CoT forms?

In addition, I have seen existing CoTs fluctuate in terms of which provinces come under their influence. FOr instance I have seen the French CoT get smaller and smaller while the ones in Genoa and Flanders have increased in size. This is pretty cool although nowhere documentated in the manual. Does anyone know about the mechanics of this? France has been involved in a lot of interminable wars, primarily with Spain and both countries have put all their resources into these wars. Even though both have suffered hits in stability, France has taken a bigger hit overall since they don't have an overseas empire like Spain to provide income. So I would assume stuff like stability, wars, etc., have an effect of which CoT grows at another CoT's expense?
 
No, it's not the trade income that effects the difference between Christian/Moslem/Pagan CoT sizes - that difference is due solely to religion. I was testing on a nearly empty map/scenario so had near perfect control. Replaced a Sunni with Catholic and then with a Pagan and noted the different sizes with everything else the same.

Okay, that explains how the trade value size of a CoT is determined but not how a new CoT forms or why a province's CoT changes even though there is no change in the ownership of the province.
