Because there actually is something differenciating them other their troops!

Space Allowance and Dungeon Appearence
The Fiends tend to have bigger rooms to dispatch inside their dungeon than the Soulless do.
The Fiends' have hallways reminiscent of a classic underground dungeon, with stone brick walls and floors, and torches hanging on them. Their workers are all flesh and bones, ressembling the Berserker unit.
The Soulless' hallways ressembles more an underground dark cult basement, with dark stone brick walls and floors, followed by lines made of various bones and small lava cracks. Torches are usually inside intricate skull n' bones designs, and their workers look like a zombified version of the Fiend's.

Minions' Strength
The Fiends' units have the highest stats in terms of damage and armor.
The Soulless' units tend to have higher HP, and have one more unit with a unique passive skill.

Hero "Extraction"
The Fiends have a building named the extractor, about the size of a storeroom, that allows the dungeonmaster to extract the souls of any hero, one at the time, without need for the room to be manned by a worker.
The Soulless's basic minion room, the Screamatorium, also acts as their "Extractor" : As long as it's manned by two or more workers, they can "torture" (their version of "extracting") up to three heroes at the same time.

Minion Feeding
The Fiends have a big Kitchen Room in which, if manned by a worker, will fill both Aggressiveness and Health of any visiting loner unit or squad unit, with a maximum capacity of 4 minions per serving.
The Soulless have a small Sacrifice Room, the size of a Fiend "Extractor", that doesn't need to be manned, and that can fill up the Aggressiveness and health of one lone unit/squad unit anywhere on the map, in exchange for the sacrifice of one worker.

Edit : Seems I misunderstood something with DEC Allocation. When you play a Campaign game, Prisons, Breweries, Wall Traps, Double-wall Traps and Mascots are at 3 DEC a piece. On the other hand, Throne Rooms, Arcaniums, Magical Armors and Magical Weapons come at 5 DEC each.
However, if you play in Skirmish, those costs are swapped, meaning Throne Rooms, Arcaniums, Magical Armors and Magical Weapons are at 3 DEC a piece, while Prisons, Breweries, Wall Traps, Double-wall Traps and Mascots come at 5 DEC each.
It wasn't related to either faction at all, my mistake there ><
