I am now playing the Aztec Empire. I can only send diplomats to my "neighbours", Inca Empire and the Iroquies. Not to European countries, so I cannot offer Spain peace. I have to wait until they offer peace.

That is rather odd. Usually when you get war declared on you by a power you can't see, their capital becomes visible to you so you can work with them. Maybe something about the exotic tag? And good luck with the Aztecs...
I think someone may have noticed this before-another handicap to stop you playing against the spirit of the game!
